MISSION / VISSION OF RUBY'S AFRICAN CUISINE
To inspire healthier communities by connecting people to delicious cuisine. Bringing the taste of Africa to the Newark community. Creating a warm welcoming dining environment enriched with the best of Afrocentric cuisine, culture, and aroma to the taste of each guest.
Ruby’s African Cuisine (RAC) is inspired by recipes from three (3) generations of strong women, who were committed to pouring out their hearts with love, and care by cooking for their families and community. RAC recipes started with my grandmother. We called her mother Marie. She loved to cook so much that she taught all her children including her boys how to cook. Then she passed the recipes over to my mother. Mother Afrolyn Kawalawu. My mother has 4 children. She taught us all how to cook and learned the family recipes.
Being in the United States of America, I catered to a few programs. At each function, I was referred to more people. There I realized the need for Afrocentric cuisine was in demand. I prayed and worked hard to bring my family recipes to the Newark, Delaware community, and the world at large. I'm glad and excited about this journey.
